Since prehistoric times, the caves below the vineyards of Cave Mystère have provided shelter. In the early 1700’s, the precious limestone was mined, expanding the caves by many miles. This stone was used to build the great city of Bordeaux at the heart of wine country. Today two wine families, the Chombart’s of Chateau de Lamothe Haux and the Speck’s of Henry of Pelham Family Estate Winery, collaborate on this fine wine, aged in barriques within the limestone caves.
Sourced from Merlot vineyards in the relatively undiscovered Cadillac region of Bordeaux, planted on a limestone escarpment, the wine barrels were aged underneath in 10 miles of caves once inhabited by prehistoric people. The caves were later mined for the very stone blocks that built the city and region of Bordeaux. Centred on Merlot, the hidden source of Bordeaux’s most opulent wines, the region of Cadillac offers a unique opportunity to make decadent, rich wines to rival those of warm climate New World regions, while maintaining the elegance of continental Europe.
Merlot also holds a special place with the Speck Brothers as it is the source of the generosity of fruit in their own Cabernet-Merlot ‘Bordeaux’ blends grown in the Niagara Peninsula’s ‘Short Hills Bench’ appellation.
